The holidays offer so many incredible opportunities to enjoy time with the ones we hold dear, and one of my favorites is baking Christmas cookies. For so many of us it takes us back to our childhood and the wonderful memories in the kitchen with our family. The smells, nostalgia, and fun gathering around the kitchen table and making these little pieces of homemade goodness. I’m sure, like most of you, we had to sample them right out of the oven with a big glass of cold milk. SO GOOD!!
That tradition is still part of my holidays today and I want to share with you my FAVORITE Christmas cookie…Chocolate Thumbprints II! Get ready because you’ll need a BIG glass of milk with these babies!!

CHOCOLATE THUMBPRINTS II
INGREDIENTS:
• 1 Cup Butter
• 1 Cup White Sugar
• 2 Eggs, Separated
• 2 (1-ounce squares) Unsweetened Chocolate, melted
• 1 tsp Vanilla Extract
• 2 Cups All-Purpose Flour
• ½ tsp Salt
• 48 Milk Chocolate Candy Kisses, unwrapped
• 1/3 Cup granulated Sugar for decoration

DIRECTIONS:
1. Preheat oven to 350 degrees. Grease cookie sheets
2. In a medium bowl, cream butter & sugar together. Stir in 2 egg yolks, melted chocolate, & vanilla. Sift together flour and salt and stir into creamed mixture.
3. In a small bowl, lightly beat the remaining egg whites. Roll dough into walnut-sized balls. Dip balls into egg whites and then into sugar. Place onto a greased cookie sheet and make a small indentation in the center with your thumb. Bake 10-12 minutes in the preheated oven. When the cookies come out, gently place a chocolate candy kiss into the center of each. (An option is also to let the candy kiss start melting and spread like frosting if you so desire).
4. Let cool and ENJOY!
